Extra-virgin olive oil of the highest category obtained directly from the olives and only by mechanical processes. Produced in our olive oil mill, with olives of varietal morainol, crushed olive oil and lecithin and in small quantities rhodium, pendulum and skis coming exclusively from the territories of neighboring municipalities of Acquasparta, Sangemini, Montecastrilli, Avigliano Umbro and Cesi. The olives come mostly from centuries-old olive trees, mainly on steep, hard, often terraced terrain, and the collection must always be done manually, but produce a very light, digestible oil and excellent organoleptic characteristics. We have several lines with high processing potential to make the olives processed just harvested and in any case not later than 24 hours. The milling is also carried out with stone mills. The extraction takes place completely cold, thus obtaining an extra virgin olive oil of very low acidity, rich in polyphenols, with intense flavor, fruity, with light spicy tones, suitable for all types of cuisine.
